Chocolate covered nuts

Ingredients:

300g nuts of your choice
100g chocolate "Gaillot"
3 tbsp milk

Preparation:


Place nuts in a small baking dish and bake for 10 minutes. Then cut them into smaller pieces. Melt the chocolate over a water bath or double boiler. Add the milk and mix well. Add the roasted nuts. Shape into small balls. Let them for 15 minutes in the refrigerator.




Candied cocoa nibs
Total Time: 15 minutes
Ingredients:
• 50gr cacao nibs "Gaillot"
• 30gr sugar
• 20 gr butter

Preparation:
Place the nibs and the sugar in a small saucepan and heat them, stirring constantly with a wooden spoon. Cook the mixture, stirring constantly, until the sugar liquefies and there are only a few specks of unincorporated sugar. Remove the saucepan from the heat and add the butter immediately, stirring well.
Scrape the candied nibs onto a baking sheet, separating them as much as possible. Store in an airtight container.








Chocolate fondant with cocoa nibs


Preparation time: 15 minutes.
Baking time: 12min

Ingredients for 2 portions:

50 g "Gaillot Classic" chocolate
2 extra squares of the same chocolate
30 g butter
30 g sugar
1 tablespoon flour
1 egg
2 teaspoons cocoa beans "Gaillot"
2 porcelain bowls

Preparation:

Melt chocolate and butter together. In another bowl, mix sugar, egg and flour. Add melted chocolate mixture to the second. Mix well. Fill 1 / 3 of each cup, place on top one chocolate square and the cocoa beans. Cover with remaining mixture.

Bake at 180 ° in a preheated oven for 10-12min
Serve warm.







Oatmeal cookies with cocoa beans

Ingredients for 20 cookies

150 g flour
80 g oatmeal
125 g melted butter
1 egg
90 g brown sugar
50 g cocoa beans "Gaillot"
1 / 4 teaspoon baking powder
a pinch of salt

Preparation:

Mix sugar and butter first. Add an egg. In another bowl, combine dry ingredients. Add them to the liquid mixture. Make 20 little balls and put them on a sheet of baking paper.

Bake 15 minutes at 180 °C in a preheated oven.






Cocoa beans bread


Preparation time: 3h.
Baking time: 20 minutes

Ingredients:

300 g flour
7g dry yeast
125ml milk
50ml cream
20 g sugar
50 g cocoa beans "Gaillot"
1 teaspoon salt
1 egg or some milk

Preparation:

Dissolve yeast in warm milk. Add 100 g of flour. Allow to rest for 30 minutes, then add the rest of the flour, sugar, salt, butter and cream. Knead the dough. Add the cocoa beans and keep kneading the dough until it becomes smooth and elastic. Let the dough rest for 1h30.
Divide the dough into smaller balls. Let them rest for 30min. Preheat oven to 160 °C. Before baking remember to apply an egg/milk wash. Bake for 15-20min.
